Vegetables

I like vegetables.
No, I think I love vegetables.
Go to the Supermarket.

Wheel your cart through the meat section.
It's colorless; dull lifeless chicken skin,
dead pink pork, beef-ish hues.

Now go to the produce isles.
Oh my God! You are surrounded by colors.
Yellows like the sun, greens like the
fields, reds like
rosy cheeks and oranges like the rise

and close of day
and purples, whites, earthy browns and everything in between.

And shapes; Oh my God! So many shapes and textures it's
almost indescribable; normal shapes and weird shapes like
alien gourds with bumps and pimples. Where did all these
creatures come from and yet they are edible and delicious.
Oh my God!  

And anybody can cook vegetables. It's almost impossible
to screw them up and you can mix them all together and they'll
still taste wonderful. Just chop up all those great colors and leave the skins
on and put them in a skillet with some velvety olive oil
and stir and cook and watch them all come together into this
incredible mixture. Oh my God! Take a picture. I did!

My dinner consisted tonight of  orange carrots, soft green celery , deep
green spinach, creamy cauliflower, snow white mushroom caps, translucent
onions, fleshy garlic and rosy red tomatoes . Wow, Oh My God!  What a
creation.
