Louie, the wise-cracking waiter, won’t leave olive oil
on the tables anymore because he said some
customers drink it. Sam’s Restaurant in Brooklyn, New
York, has been serving delicious pizza and authentic
Italian food for 75 years. Mario is the chef-owner and
he built the brick oven with his own hands in the 1930’s.

  Louie is Mario’s middle-aged son and runs the dining
room and bar. He keeps old Mario in the kitchen,
where he belongs. Louie also hides the grated cheese
shakers because some customers open the tops and
use spoons to scoop out mounds of fresh Parmesan.
Louie told us that first off, it’s disgusting, and secondly,
his cheese prices keep going up. If someone uses up
all his cheese on the table they'll see an extra $2.00
charge when they get their bill.
  I like Sam’s because it hasn’t changed in 75 years. The walls are covered with old cherry-wood paneling and
there are three wooden phone booths inside the restaurant. Louie likes to talk about his hunting trips and his
gun collection and he becomes angry if he gets on the topic of various city agencies that come to inspect his
vintage restaurant and give him stupid little fines for minor things, just to break his balls.

  I hope that Louie’s balls don’t get broken so bad that he decides to sell Sam’s. The old Italian neighborhood is
changing fast all around Sam’s.  When Louie was clearing the tables he told us, “This place has been here for
75 years. I’ve been here for 49….. But I’ll take the neighborhood the way it was 30 years ago.”
